Ever wish that Thanksgiving dinner could be easier and a lot less stressful? Olympia’s Next Top Chef winner Veg Kupiec has your recipe for success with a menu that substitutes formality for fun! Why not try Thanksgiving Sliders made with Sous vide Turkey Breast, Homemade Cornbread Stuffing, and fresh Cranberry-Cream Cheese Spread instead? Delicious Sweet Potato Fries are the natural accompaniment and dessert is a seasonal Apple Harvest Cake served with whipped cream. This fall, Barb Agee, long-time instructor and assistant at BSC and veritable fountain of information, is “In the Kitchen,” putting her own delightful spin on this free and informative monthly event. Join Barb for new recipes, product sample tastes, and free coffee or tea, compliments of Bayview.

Squash B’gosh Yes, by gosh, you’re going to love this squash! Count on Barb to supply you with the very best squash recipes such as a delicious Yucatan Tapenade with Delicata Squash, and Kabocha Squash with Cardamom and Nigella Seeds, topped with a Chile, Yogurt and Cilantro Sauce. To try at home: Roasted Acorn Squash with Orange and Curry, the perfect side dish for your fall dinners.

Salish Sea Liqueurs Dinner

Instructor: Sandy Desner, co-founder of Salish Sea Organic Liqueurs, Lacey,with Paula Leichty, your chef for the evening.

Salish Sea Organic Liqueurs was founded by Sam Desner, mixologist, and his father Sandy. They handcraft all of their liqueurs in small batches starting with a base spirit made on site and adding only organic ingredients. Spend an evening with Sandy as he discusses the process of making liqueurs and talks about their products. You’ll get to taste their Lemongrass Liqueur with Paula’s Lemongrass Prawns, and the honeybush liqueur with Field Green and Spinach with Sautéed Dry Figs, Oranges, Walnuts and Goat Cheese, served with a mint and honeybush liqueur vinaigrette. Paula’s main course, paired with Sage Liqueur, is Seared-Roasted Pork Tenderloin with Cognac-Sage Cream Sauce and Sweet Potato and Delicata Squash Gratin. Dessert is Pavlova with Lemon Hibiscus Cream, individual meringues with gorgeous magenta-hued cream, that pairs perfectly with the Hibiscus Liqueur. Prepare for an evening you won’t soon forget! Yes, it’s a bit of a wait ‘til Thanksgiving but in the meantime, Irene and her helpers offer lots of ideas to get excited about! In this class you’ll create a gorgeous Edible Turkey Centerpiece, learn how to make Mozzarella-Stuffed Turkey Meatballs served with rice and bake the Best Ever Pumpkin Spice Muffins that can be enjoyed anytime of the day. Thanksgiving is only 19 days away!

A Local Restaurant Rush In Dumplings Rush In Dumplings - A Hands-On Class

Instructor: Brad Eisold, owner Rush In Dumplings, Olympia

Their website says it all: it’s the “first ever Russian pelmeni joint in the heart of Olympia.” And WOW, are they tasty! Owner Brad Eisold visits BSC offering hands-on instruction on how to make these little dumplings yourself. In class we’ll make both Beef and Potato Pelmeni, going through all the steps then feast upon them, and try them with two traditional topping variations: The Siberian Classic that combines sour cream, butter, cilantro, Sriracha vinegar and curry powder, and Rush-In Loaded that loads on sour cream, cheese, bacon, and green onion. Hands-On Sour Cream Cranberry Pie

Instructor: Beth Storey

Beth knows pies. If you’ve never mastered the art of pie making, here is your opportunity! She’ll show you how to make the perfect pastry - flakey, tender, flavorful and not impossible to handle. Then she’ll take you step-by-step through her recipe for Sour Cream Cranberry Pie, which will stand out from all those old favorite holiday pies. Made with rich sour cream and lovely, fresh cranberries, this is the pie you’ll want to serve for Thanksgiving and beyond! Take the pie you make in class home with you to bake off or freeze and save for the holidays, and enjoy the pie that Beth makes in class. Bring your own pie pan, if possible.

Ethiopian Eats

Instructor: Mitra Mohandessi

The cuisine of Ethiopia takes advantage of what is locally available - grains, legumes, vegetables, dairy and meats. Sweet and aromatic spices turn simple ingredients into amazing flavors. In this class, Mitra will introduce you to Berberé, the world renowned Ethiopian spice mix and the foundation of all Ethiopian dishes, and Niter Kibbeh, spiced clarified butter, an essential ingredient of a variety of foods. She’ll demonstrate how to prepare Zingi, Ethiopian beef simmered in onions and Berberé, accompanied with Tsebhi Birsen, split red lentils cooked in tomatoes, onions and aromatic spices, and Doro Wat, rich chicken braised in spiced butter, ginger and eggs. End the evening with a slice of H’mbasha, a sweet cardamom pan bread and a cup of spiced tea. Get ready for a spicy evening!

The Pacific Northwest Meets Northwest France

Instructor: Lee Ann Ufford

As the days grow shorter and the nights chillier, it’s the perfect time to entertain with friends and family! Join Lee Ann for a seasonal menu where the Pacific Northwest meets Northwest France. Start the evening with a beautiful Wild Mushroom Napoleon that marries the fall flavors of mushrooms, frisee’ salad and a sherry-walnut vinaigrette in crisp phyllo layers. The main dish is a photo worthy Chou Farci - a flavorful torta of Savoy cabbage and spiced meat accompanied by a rich Butternut Squash Gratin and a savory delight, Roasted Garlic and Cornmeal Madeleines. Your dinner party concludes with Pears Flogard, sautéed pears baked into a custardy French version of bread pudding. Light the fire and "Bon Appetit!"

She’ll share some of her best recipes from the book including Dutch Baby with Crab and Mushrooms, which can double as either a first course or a savory brunch option for guests, delightfully messy Rosemary Roasted Crab, Fresh Spring Rolls with Crab that’s especially fun for parties, and a refreshing Shaved Fennel Salad with Crab and Blood Oranges. I Love Thai Cooking! The Basics of Thai Cooking

Instructor: Pranee Khruasanit Halverson

Get back to basics and learn how to make your favorite Thai dishes at home! Once again, Pranee demonstrates how easy it is to cook food from her homeland in your own kitchen. In this class she’ll divulge her recipe for Phad Thai, stir-fried Chantaboon rice noodles with her special Phad Thai sauce, tofu, peanuts, eggs and prawns. Other favorites include Tom Kha Gai, chicken coconut soup with galangal, lemongrass and Kaffir lime leaf, Kao Phad Kunchiang, Thai fried rice with Chinese sausage, and Panang Neua, Panang curry with beef and a chiffonade of kaffir lime leaves, served with Jasmine rice. Discover how simple it is to cook Thai yourself! I Love Thai Cooking!
