Summer Baking with Berries

Lee Ann Ufford ~ Wait no longer—NW  berries are here!  Join Lee Ann as she makes Meringue Cupcakes with Strawberries and Raspberries and a super-fast Berry Buttermilk Cake. Literally, “simpler than pie” is a Rustic Gallette with Berries and Fresh Peaches. Local blackberries shine in Individual Blackberry and Lime Gratins, a dessert that’s ready in 15 minutes!   Too hot to bake? Whip up Blackberry-Lemon Curd Parfaits for a cool summer treat.  Complementary wine pairing. $45

No-Heat “Cooking” for Warm Day

Kelsang Tsoglam ~ Chef Kelsang, puts together some incredibly easy and delectable summer dishes for warm weather noshing.  Her colorful menu includes: Cold Basil, Buttermilk, Zucchini Soup, Life is Short Tacos (black beans, avocado and other goodies inside a corn tortilla), Orange-Scented Very Veggie Cous Cous, White Bean and Goat Cheese Panzanella (summer vegetable bread salad), Indonesian Rice Salad (a gingery mix of cashews, carrots, bean sprouts, cilantro and ketjap manis), and decadent Chocolate Peanut Butter Pie

A Passion for Peaches ~

Ava Waits, Holistic Health Counselor , Proprietor of Parisian Picnics, loves peaches, and in August the peaches around here are super juicy and sing with flavor!  Come and taste the lovely ways that Ava uses these local gems.  You’ll learn to create: Peach, Pepper and Sweet Onion Kebobs, Grilled Peach Salad with Avocado and Goat Cheese, Fresh Peach Salsa on Grilled Fish and Peach and Apple Cobbler.

Salads from South of the Border

Deborah Jackson White – Proprietor of Mudflower Catering Company. When it’s warm you want salad and Deborah puts her inventive touch to these Latin-styled versions. Start with a savory Green Chile Cheese Baguette, then watch her assemble a Latin Caesar Salad with Cilantro Dressing, Garbanzo Salad (combined with herbs, sweet peppers, olives atop a bed of butter lettuce) and a luscious Avocado Salad (combined with seasonal fresh fruit, pine nuts and red leaf lettuce with a poppy seed dressing).  Complementary wine pairing. $45

Local White Fish Redux
Chef Treacy Kreger ~

Former chef/ owner of the County Seat Deli and Vern’s Restaurant in Shelton In our “neck of the woods”. Another fish --which will remain nameless-- gets all the attention, but we have many other delicious fish swimming in our waters! Chef Treacy creates  elegant main dishes that will wow your guests! He’ll prepare Ling Cod (or Halibut) with Clams, Crab, Summer Vegetables  and Lemon Herb Butter cooked in Parchment En PapilloteCitrus Baked Black Cod with Parsley Butter and Sole Stuffed with Shrimp Salad and Topped with Hollandaise.  You won’t miss that other fish for a moment! Note: freshness and availability may require substitutions.

Hot Pepper Jelly

J. Craig Morris – 3X Grand Champion of
Preserved Foods at the Puyallup Fair. Our resident “jelly master” shows you how to master the art of making and cooking with hot pepper jelly.   He demonstrates the steps for creating Hot Jalapeno Jelly and “Light My Fire” Pepper  Jelly and then utilizes them in Medjool Dates Stuffed with Pepper Jelly Cream Cheese (and topped with nuts), Crackers Served with Cream Cheese, Lumpfish Caviar, Pepper Jelly and Basil, and Lamb and Pepper Kabobs with Pepper Jelly Glaze.  As a bonus, we’ll also get to taste the jellies with chocolate, a combination that Craig is crazy about!

Pizza on the Grill

Christine’s popular class never goes out of style!  Hands-on instruction takes place on Bayview’s deck, where you’ll learn how to grill your own personal pizza.  Transform Christine’s easy-to-make dough into Double Mushroom and Sausage Pizza, Verdura & Formaggi (cheeses & roasted summer vegetables) or Rosemary Pizza with Roasted Garlic, Olives, Mozzarella, Basil, Pancetta and Goat Cheese. Bring along your favorite friend and make pizza on the grill the perfect Friday night out!

In Olympia, it’s easy to eat locally in the summer and Leanne, a Northwest native, loves to highlight our amazing produce in dishes including: Peach Gazpacho, Edamame Succotash (a riff on New England’s version with fresh corn, red bell, sweet onion, tomatoes and basil), Watermelon Salad with Arugula, Gorgonzola and Candied Macadamia Nuts, Heirloom Tomato Salad with a Tomato Granita Topping and Salt-Crusted Beets with Avocado, Lavender and Thyme.  Reap the bounty of “your own backyard!

Does anything taste of summer more than ripe tomatoes?  Lee Ann explores new ways to enjoy this versatile fruit of summer. Begin with the simple but luscious Provencal Sausage and Rosemary Tomatoes, her spin on classic Tomato Bruschetta or the , company-worthy Heirloom Tomato Napoleons with Prosciutto Vinaigrette.  Cherry tomatoes star in BLT Salad with Aioli Dressing.  A Southwest Chicken Pasta is perfect for a warm summer evening out on the deck.
