This talented and award winning grillmeister gives students a “smoking” primer demonstrating the fail safe techniques for wood smoke cooking. From chips to charcoal, learn from our local celebrity and famed restaurateur while trying Amy’s lip-smackin’ and finger-lickin’ BBQ Sauced Smoked Chicken and Baby Back Ribs and Grilled Taters. Master what most consider the purest form of barbecue. Complementary beer sampling. $65 Hostess and instructor extraordinaire Pat Leslie opens the BSC kitchen for this FREE culinary program featuring Paninis and Muffulettas, easy tasty summer meals. Offered in both the morning and afternoon (repeat of morning class), the class features demonstrations, tastings and sage advice about cooking techniques, nutrition, recipes, ingredients, food storage and safety. Urban Pantry is a smart, concise guide to creating a well stocked pantry in your home. Over sixty creative recipes take advantage of local ingredients, eliminating wasteful kitchen practices and making the most out of the food you buy or grow. Pennington will share valuable tips for growing greens, aromatic herbs and edible flowers. The evening will include: Small Batch Preserving and Canning Tips, Apricot Mustard, Plum Nigella Jam, Herb Vinegars, and Scented Sugars. Complementary wine pairing. $55 Chef Thierry presents classical French dishes throughout the year and responds to the American yearning for steak and potatoes with these French standards. He creates the butter enriched Béarnaise Sauce for his Rib Eye Grilled Steak, accompanied by Gratin Dauphinois (thinly sliced potatoes with cream and cheese) and a Mesclun Salad with a Vinaigrette. This hands-on class, a popular summer favorite on Bayview’s deck, takes students outdoors for al fresco pizza with Christine’s simple-to make dough and her grilling guidance. Literally your own personally created “take-out” pizza order includes: Double Mushroom Sausage Pizza, Rosemary-Crusted Pizza with Roasted Garlic, Olives, Mozzerella, Basil, Pancetta and Goat Cheese, Pizza Verdura & Formaggi (four cheeses and roasted vegetables). Hands-on adult class. $45 The local garden and market fresh vegetables at their peak in the season are featured ingredients in everyday Thai cuisine. Pranee shares her native flavors and family favorites with Por Pia Sod (spring roll with rice paper and Thai sweet and spicy dipping sauce), Yum Mamuang (chicken mango salad with mixed Asian greens and herbs), Yum Makrua (Thai grilled eggplant salad) with Roasted Pepper and Lime Dressing, Gaeng Leang (three summer squash and Thai basil) and Som Tum Pollamai (seasonal fruit salad with Thai herbs).
